Crafted exclusively from green olives of the Nocellara variety, meticulously pitted by hand, this oil boasts a light aroma and a sweet, delicate taste with a unique density. Extracted solely from the olive pulp, it is free from the tannins and bitters found in the stone and small almond, resulting in a product of exceptional sweetness and sensuality, perfect for pairing with exquisite pastries and fish-based dishes. With a harvesting altitude at medium hills and using stone rollers for milling, followed by continuous cold cycle extraction within 12 hours of harvest, separation by centrifuge, and natural decantation, this oil preserves its intense fruity aroma and balanced flavor profile.
